There has been a lot of exciting progress at the restaurant these past few weeks and it’s been incredibly gratifying seeing this, my very first hospitality project, come to life. It’s been so much more satisfying too, feeling so involved in every decision that has been (and will be) made. From watching the walls go up and the hoods installed to seeing the paint and millwork being applied- it’s getting real. It’s also been quite sweet to see Louis’ reaction to the build-out, hearing him say, “Man, this is going to feel so good in here!”. Construction has easily become my favorite part in this whole process; it’s the part where I’m learning the most and seeing my confidence as a designer grow!
Everyone was right, once this part got going, the whole thing feels like it’s happening really fast. If we keep this up, we’re on track to complete construction on July 24th, which means we’ll have 4-6 weeks from that point to set-up, R&D, hire, train, and open! It’s wild when visiting friends say things like, “The next time I see you, you’ll be running your restaurant!”. That thought still gives me the nervous tingles in my belly, thinking about the opening being right around the corner. It was Nov 2021 when we really started concepting and, since it’s been such a long time coming, I’m still sorta in denial that it’s actually happening. Is this what it feels like when you’re in your third trimester?!
Ready or not, our life is about to change!
When the walls and half walls started going up, it was pretty dang cool to walk through the space as drawn on my plans. It’s one thing to draft up a floor plan that makes sense on paper, but it’s a whole other to be able to walk through each enclosed space, experiencing the distances between walls, passing through doorways and cased openings, and even feeling the new ceiling heights. So far, everything feels really good, cozy in the best ways.
