Last week was absolute chaos. Remember in my last issue, when I talked about how frustrated I was getting with all of these little issues cropping up? Apparently, that was nothing; immediately after it published, our restaurant buildout turned into episode 5 of The Bear, Season 2. Everyone on top of each other, issue after issue coming at us from all directions, the non-stop sound of drilling ringing in our ears, the sight of our painters moseying around, painting the same damn door casing the wrong color, AGAIN! Now that I’m on the other side of it, writing this newsletter with everything fairly resolved, it’s pretty comical how quickly things can go sideways. What’s great about having a partner who’s more optimistic than you are about everything is that he’ll say things like, It was going too smoothly for us anyways, so this all had to happen!
I’ll admit, today’s issue might go over most of y’alls head- it involves a lot of construction and restaurant equipment problems, but this is real restaurant life y’all! Welcome to the madness! It may look cute on instagram, but this last stretch is pure mayhem.
Up until this past month, we’d been getting anything we’ve ordered delivered to our apartment, fully staffed with a front desk crew to receive packages at all hours of the day. It works great when you’re ordering some DIY stuff from Home Depot, but now the big things getting delivered. Like, white glove, thousand-pound hunks of metal big things. And with those, we’ve had to get them delivered directly to the restaurant, and if there’s anything I’ve learned, it’s that 4-hour delivery windows are just suggestions for us folks who need to strategically plan around that window to both be productive and available at a moment’s notice. So we’re given a 4-hour window and were told we’d get a 30-minute heads up before arrival, and more often than not, they either missed the window completely (too early or too late), decided giving us a heads-up was too much trouble, and/or rushed us to sign off on the paperwork before we were able to check the full delivery.
