I might be saying this a ton, but it feels like SO much has happened since last week’s issue. It’s nice to have these weekly moments of writing- working on these issues has been my only time to reflect on what’s been happening because, for weeks now, it’s been non-stop late nights followed by early mornings. As exhausting as it is, it’s so damn fulfilling. We’re literally giving it everything we’ve got to make sh*t happen and there have been so many moments when we’re looking at each other saying, damn, we’re really doing it.
This week’s issue is going to be a visual diary because it’s 10:45pm on Tuesday, 11 hours before this is supposed to come out, and my brain is fried! ✨

R&D and LOTS OF TASTINGS! We talk a lot about how it eats, spice levels, allergens, the visual value, and obviously how it tastes. This is our CDC Chef Sam :) I've been wanting to get him on this newsletter to introduce him to y'all but we've been busy trying to open a restaurant together ;) SOON THO!

Watching Sam & Lou run the show in the kitchen brings me a lot of joy. They're just SOOO good at their jobs. They make me want to be better everyday and they support me each and every one of those days too. & my first pumpkin spice of the season BABAAAYYY :)
On top of getting ready for staff orientation and training, the space had to finally get styled and officially shot by our one and only @carterhiyama ! I had my UBER talented friends, @hoppeshoppe and @veronikalouise, come help style the space and style the actual photoshoot! Also, squeezed in a merch photoshoot that is pretty cute I must say :)
For the very first time, this week, we had our full team in the restaurant to begin training and, boy, was that such a surreal feeling. It really dawned on me after Day 1: they all chose us just as much as we chose them and that’s somethin’. ❤️
